Well Hello There!! The combo of a vacation and starting a new job has already made me veer from my planned M/W/F schedule. Oh, well. As with anything, if you fall off track, don't stress. Just get back on track as soon as you can!
I have been going from early am to late pm since we got home from our great trip to South Carolina, I haven't even unpacked my bag yet :/ I have been working on a full post about our travels and hope to have it ready for Friday, but I wanted to pop in and show you what I'm cooking this week.

Recipes from The Food You Crave by Ellie Krieger
Instead of hopping onto Pinterest this week I opened one of my favorite cookbooks The Food You Crave by Ellie Krieger and picked out some yummy looking recipes. While her show on the Food Network was cancelled her cookbooks are filled with great, healthy options for breakfast to dessert.
Tonight I am making Tuscan Roasted Chicken and Vegetables. I plan on using zucchini, roma tomatoes, broccoli, and carrots. I have made this before and it is easy and very adaptable to whats in the fridge.
Also on the menu this week is Crispy Chicken Fingers (which I am going to put on a salad) and Soba Noodle-Vegetable Salad with grilled chicken. I am really excited about the Soba Noodles. I love most Asian style dishes!
