How was your Easter? Mine was great. Spent some quality time with my family and had a great dinner. We even had an egg hunt and dyed eggs, which we haven't done in at least 12 years.
At first my brother and I were confused by why we were hunting for eggs until my dad told us there was money in the eggs. After that, the hunt was on!! Jonjon got the most eggs but I found the one with the $5 bill in it, so I won!!
I also won because Jonjon had to go into the lake to get one of his eggs. In the process he stepped into a large hole in the muck. He was thigh high in mud and it made my morning :)
After Jon was clean we hung out and had a glass of wine on the dock and then went inside for dinner. My dad did a great job of making the perfect mix of a healthy and delicious meal. We had a roast with roasted vegetables, baked asparagus, sweet potatoes, crab legs and shrimp. It was so fulfilling :)
Now that Easter is over I have tons of eggs in the house. Most of my breakfasts include eggs so I'm not worried about using them up. They are a great source of protein that is easily absorbed by your body and they are more fulfilling than carb loaded breakfasts because they will keep you full longer. Normally it is in the form of scrambled eggs, an omelet, or Two Ingredient pancakes.
I had to post this inappropriate photo that I took while making my Two Ingredient pancakes the other morning. My maturity level shows with this photo but I giggled like a little girl while making breakfast. I also ate my pancakes as they finished (standing in the kitchen) and only took a pic of the last one that I made, that was a little burnt. There are many different variations of the Two Ingredient pancake but I just put 1 banana and 2 or 3 eggs in a bowl and mix until there are no lumps. Sometimes I add blueberries or cinnamon or even vanilla extract. Then make them just like you would pancakes. They are quick, easy and sweet!!

I can't wait to try the Baked Egg in an Avocado and the Eggs in Pepper Rings :) Yummy.
