Wow! That weekend flew by fast, I can't believe its lunch time on Monday already. Lots of things are moving and shaking and I am excited to possibly start with some new personal training clients in the near future. Other than that fantastic news, this weekend was filled with FOOTBALL! Ryan is not a super football fanatic but he is an overall sports fan and was excited to watch as much football as possible. This gave me time to do some laundry and tidy up the house while he was preoccupied :)
Over the weekend I made one of the recipes that I picked out for last week, the Crispy Chicken Fingers over salad. It was really easy and rather tasty.

I also had success with the Tuscan Roasted Chicken and Vegetables. Ryan devoured his chicken and lots of veggies but we still had enough for leftovers which I had for lunch the next day.
Travel Treats
If you remember, my family and Ryan and I went to South Carolina for the Labor Day weekend. We had a fantastic time including the 7 hour drives to and from. While maybe the drives weren't fantastic, we managed to play games and listen to music to keep the driver (Ryan) upbeat and occupied. Jonjon and Ryan found 30+ in the license plate game which was very impressive considering we only drove through three states. I also made sure to pack some snacks for the drive. These snacks were a saving grace and helped us to power through the drive and get there in no time!! Here is what I packed.
On the way home we took a detour to check out one of Jon's favorite spots from his college days called Cook Out. Our mouths were watering from hearing Jon perfect his order on the 30 minute detour to the closet Cook Out. I got a small burger (they had three sizes), onion rings, coleslaw (not so good) and a Peanut Butter Milk Shake. The burger was great, not too greasy, and the onion rings were the perfect portion, but my favorite part was the milkshake!

Overall, it was a great trip. I am glad that Ryan was able to go and meet part of my family and that I was able to see where my cousin Devin and his wife Bridget live (Greenville, SC). Cant wait to see very one again!
