Today was a damn good day! I got a lot done at work, finally got tickets to a concert I have been dying to go to (the show sold out weeks ago, but I managed to scrounge up 3 tickets for me and my gals), bought a new skirt and just finished a very tasty dinner. Since I am now going to the concert I had yet another reason to have to skip SUBU and ended up eating dinner solo. This week was piss poor where CrossFit was concerned.
For dinner I decided to make some Shrimp with Veggies. It was basically the fixin's for a Shrimp Fajita. I thawed out 10 medium frozen shrimp and then removed their tails, and doused them with The Fresh Market Anything Goes Sauce. I then diced up a red bell pepper, two scallions, and a zucchini. I sautéed all of these along with some mushrooms in a big pan with olive oil and worcestershire pepper. After the veggies got nice brown edges I added the shrimp and cooked until the shrimp were warmed through (this doesn't take long). I cut up half an avocado and squeezed a little lime juice on top (cause I add half sitting in my fridge). It was magnificent and filling! Got you have a base for some beer this evening!
Alrighty, I am gonna take the pup for a spin and then get ready for the show! Super excited to see the band and my old roommate that I haven't seen in months:)
